To keep your eyes peeled

= to keep alert
= to pay close attention in anticipation of something.

  • Keep your eyes peeled for Martin. He should be home any minute and I don’t want him to come home and find this mess we’ve caused!
  • Keep your eyes peeled for him – he hasn’t paid his bill yet!

Peel = to remove the skin from a fruit or vegetable

Here we can assume that it refers to removing any layer from your eyes that may stop you from seeing something that may happen. (Though not literally, only in a figurative sense)
